Marrickville’s Riccardo’s takes the stress out of pizza night

There’s nothing like a pizza party to liven up a boring day in lockdown.

Giving the kids free-rein over their own pizza sauce and toppings is guaranteed to inject some fun into a day of home schooling.

Riccardo’s Pizza has made family pizza night a whole load easier with its do-it-yourself packs. Featuring five 10 inch frozen bases, Mutti pizza sauce and shredded mozzarella ($29.95 plus delivery), all you need to think about are the toppings. There’s gluten-free bases too.

Riccardo Moretti (pictured below with his Nonna) is the founder of this Marrickville-based business. Normally a supplier of pre-made pizza and dough to the hospitality industry, lockdown has changed his focus. With so many of his clients currently closed, he is now delivering his restaurant products to the home.

In addition to the Family Fun Pack do-it-yourself kit, he supplies frozen pizzas across NSW, including same-day delivery in Sydney (if you’re local, save yourself the delivery fee and click to collect at his Lilian Place factory). These cook in 6-8 minutes with toppings ranging from the classic Margherita to Barbecue Meat Lovers to Chipotle Mexican. There’s a three-pack Variety Box for $29.95 plus delivery. Or stock the freezer with a wholesale pack of nine pizzas for $63.

Moretti brings many years’ experience as a pizzaiolo, or pizza chef, to his business. His recipes are inspired by his Calabrian heritage, and it was while working in his family’s pizzeria that the desire to perfect snap-frozen dough began. In the early 2000s, his family’s business Pizzeria Belluci in La Piazza at Bankstown Sports Club was making 4000 pizzas a week, putting a big focus on producing a consistent product in the face of time pressures. This is where the idea was borne.

Moretti’s dough is made using only a small amount of yeast and a slow fermentation process, resulting in a light and easy-to-digest pizza. The bases are made from a high protein Australian flour and are a good source of fibre. And the packaging is 100 per cent recyclable.
